From day one, the Spinnakers’ kitchen has followed in the artisan roots of the brewery. From an open kitchen equal weight was given to the relationships between cook and patron as is typical of the bartender / patron relationship. Getting to know your cook is as important as getting to know your bartender or your spirits merchant. At a time when there was an increasing disconnect between farmers and consumers, the Spinnakers kitchen team has increasingly engaged in the pursuit of local, seasonal, sustainable foods, prepared on site, from scratch. Our menu changes with the seasons, showcasing what’s grown and raised close to home.

It is the abundance of healthy, delicious food available in our part of the world that inspired founder Paul Hadfield. Rather than rely on processed and pre-packaged products, Spinnakers embraced the local food movement before it became a movement. “It just takes some madness, some beers and some determination to go out and do things a little bit differently,” says Hadfield. “And it’s way more fun.”

Spinnakers has always taken a bespoke approach to bringing local flavour to your plate. Inspired by a visit to a small Laurentian village bakery with it central wood fired brick oven producing crusty artisan loaves, Spinnakers bakers use a Woodstone brick oven to obtain those wonderfully crusted loaves as well as an array of pizzas. We draw mineral water from a 225 foot deep well that tapped into an aquifer below the brewhouse. Carbonated in stainless steel tanks in the brewhouse, spinnakers produces the only sparkling mineral water in British Columbia. Our wild seafood is smoked in-house and the herbs we use to accent our fresh, seasonal fare are picked from gardens located on site.
