Little Qualicum’s Bleu Claire Cheese paired with Forty Creek Double Barrel Reserve, Natural Pastures Aged Farmhouse Cheddar paired with Sheringham Distilleries Williams White, Pacific Pepper Cheese paired with Century Distillers Ninety 5 Year Old, Comox Brie paired with Teeling Small Batch Whiskey. Accompanied by Apple Chutney, Spinnakers Grainy Mustard, Crostini, Baguette & red fife baguette.

TEELING DISTILLERY – SMALL BATCH

This small batch bottling consists of hand selected casks which are given further maturation in ex-Flor de Cana Rum barrels imparting an extra sweet and smooth flavour unique to Irish whiskey. A very approachable whiskey due to the influence of the rum cask which creates a unique smooth, sweet, slightly woody marriage that sparkles on the tongue.

SHERINGHAM DISTILLERY – WILLIAMS WHITE

William’s White is a White Whisky inspired by the high quality, smooth clear whisky that was once produced in our area. Aromas of sweet grains with a clean & slightly spicy flavour.

CENTURY DISTILLERS – NINETY 5 YEAR OLD

The mouth-feel is soft as the whisky crosses the palate with flavors of wood spice, dusty rye, & very light flavours of butterscotch & corn syrup. Although the whisky is aged for only five years, the oak spiciness it brings forward is firm with impressions of citrus peel & tobacco growing in the glass. I taste a hint of honey sweetness, a gentle sweep of vanilla, & a vague mustiness of baby corns underlying the other flavors within.

FORTY CREEK – DOUBLE BARREL RESERVE

This whiskey has a wonderful golden roasted aroma filled with deep vanilla notes and highlighted with toasted spice, pecan and walnuts. There is a caramelized creaminess to the flavour with a rich spice that lifts it off the tongue. The finish is very smooth, mellow & extra-long.
